Crunchy Asian Tofu Cups with Creamy Miso Dressing

Eating the rainbow is one of the best ways to obtain a wide array of nutrients and minerals. This meal sure does that! You will literally feel so healthy as you take each bite.

What I love most about this meal is the simplicity. It literally took me 10 minutes to whip up, made hardly any mess and tasted absolutely insane. This is exactly how I like to cook, and all of my recipes that I blog about or include in my meal plans for my clients follow these principles. Not many of us want to slave away in the kitchen and waste time!

These crunchy asian tofu cups will definitely support weight loss and fit in extremely well with a low carb, keto diet. An amazing fat burning meal that is guaranteed to please your taste buds and tummy's. The fresh crunch of the veggies in the lettuce is incredible with the tasty and zingy sauce. Im obsessed! Crunchy Asian Tofu Cups with Creamy Miso Dressing

Gluten free, grain free, dairy free option, refined sugar free, low carb, keto friendly and vegetarian.

Total time: 10 minutes


  • 200g organic, firm tofu

  • 1 medium carrot

  • 1 red capsicum

  • 1 cup bean sprouts

  • 1 large handful of fresh mint leaves

  • 1 head of iceberg lettuce

  • 3 large tablespoons organic, white miso paste

  • 1 large tablespoon tamari (gluten free soy sauce).

  • 1 tablespoon organic mayonnaise 

  • 1/2 tablespoon white vinegar

  • 1 tablespoon plain, greek yogurt (or coconut yogurt for dairy free option)

  • 1 tsp stevia


  1. Peel off lettuce leaves and arrange on a plate

  2. Slice tofu into 0.5 cm slices. Coat a large saucepan with a small amount of coconut oil or coconut oil spray on medium-high heat. When pan is hot, add tofu. Cook until slightly browned (about 4 minutes) and then flip. Remove from heat after a further minute or two and set aside.

  3. Slice carrot and capsicum into long, thin strips. Arrange on a board along with the bean spouts, tofu, mint leaves and lime wedges. 

  4. To make the dressing, in a bowl, combine miso, tamari, mayonnaise, white vinegar, yogurt and stevia and whisk until combined and creamy. You may want to taste and adjust these proportions accordingly!!

  5. Grab a lettuce cup, fill with every element, squeeze with lime and enjoy!
