Hearty, Healthy Bolognese with Zoodles

I know we all think our own Mum's bolognese is the best.. but I still want to share this one with you. This is a staple dish for me, at least once every two weeks. It is so comforting, tasty and simple and having a mix of the meat mince makes it lighter than most recipes.

Serving the bolognese with zucchini noodles (instead of white pasta) saves you a whole lot of refined carbohydrates and calories and provides you with fibre and nutrients to feed your gut bacteria. This makes this meal a weight loss and gut friendly meal.

Serves 4-5 people

Ingredients:

  • 1 small onion

  • 1 stalk celery diced finely

  • 1 carrot diced finely

  • 1 tablespoon olive oil

  • 1 large clove of garlic

  • 600 grams good quality lean beef mince

  • 400 grams good quality pork mince

  • 50 grams tomato paste (1 small tub)

  • 2 cans of diced tomatoes

  • 1/2 cup red wine

  • 1 teaspoon mixed Italian herbs

  • Pinch of chili

  • Salt and pepper

  • Fresh basil and Parmesan cheese to garnish

Method:

  1. In a large casserole dish (with a lid) on medium heat, sauté onion, celery and carrot in olive oil

  2. Add mince cook for approximately 5 minutes, stirring occasionally until slightly browned

  3. Add tomato paste and cook for a further minute or two

  4. Add wine and cook for a minute until it is reduced

  5. Add the canned tomatoes and season with salt, pepper and herbs

  6. Simmer for about an hour with the lid on, check on the consistency every 10-15 minutes and stir, add a little water if necessary (I usually need to add approx 1/2 cup of water if simmered for an hour)

  7. Just before serving stir through fresh basil

  8. Serve on zucchini noodles and top with Parmesan, extra salt and pepper and chili if desired!

If you only eat one portion, freeze the rest in Tupperware containers and then you have a dinner at hand whenever you are pressed for time. Preparation is key ;)
