There's something about spinach that makes me feel so healthy straight after eating it! I absolutely love this low calorie, low carb vegetable and one of my all time favourite food combinations is spinach with feta or ricotta... so I have created a side dish that contains all of it!
This ricotta, feta and spinach scramble is packed full of nutrients and antioxidants and is SO tasty and easy (like all of my cooking).
Spinach is high in niacin and zinc, as well as protein, fiber, vitamins A, C, E and K, thiamin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper, and manganese. In other words, it’s loaded with good things for every part of your body!
The folate in spinach is great for your healthy cardiovascular system, and magnesium helps lower high blood pressure. Studies also have shown that spinach helps maintain your vigorous brain function, memory and mental clarity.
So here is the recipe!
Creamy, Cheesy Spinach Scramble
Preparation time: 2 minutes
Cooking time: 10 minutes
Total time: 12 minutes
500g frozen spinach
1/2 cup smooth ricotta
1/4 cup feta
1 large garlic clove
1 tablespoon butter or olive oil
Salt and pepper to season
In a large saucepan heat garlic and butter/oil on low to medium heat
Add spinach and stir for a few minutes then place a lid on-top (to speed up the defrosting of the spinach)
When the spinach is defrosted and heated through, stir through the ricotta and feta
Season with salt and pepper!
Serve with any source of protein (chicken and lamb go very well). And add any other vegetables if you desire! Roasted pumpkin (as pictured) worked so well with it! Such a simple, quick, healthy and satisfying meal that will definitely make you feel great.
